Salmon Salmon! (Santa Cruz Beach, California, 2013)

For every summer vacay, there should be an obligatory beach escapade!

This summer, the fam and I went to Santa Cruz Beach and walked along the looong Boardwalk. So, when lunch time rolled around, we went to Firefish Grill. A romantic seafood resto located by the beach, so you can see the crystal clear waves roll in the shore when you looked out the windows. Sitting here makes me want to dine here with YOU. Cheesy, I know. But, I can't help it though. The atmosphere and gourmet dishes were enough to induce romance, and in my case, romantic fantasies. HAHA. 

I went with their $8.95 plate of Salmon Croquette. Stuffed with fresh salmon, shrimp, crab, and jack cheese. Topped with the finest beurre blanc sauce (A French emulsified butter sauce with a reduction of white wine or vinegar, and grey shallots, where cold whole butter is blended off the heat to prevent the separation of the elements), and a slice of lemon. The croquette is artistically served over a plate of creamy risotto and fresh vegetables of the season : cauliflower and carrots.
